Diabetic Pound Cake
A sugar-free pound cake leaning on raisin-water and applesauce for moisture, with cinnamon and vanilla for warmth. Surprisingly tender and friendly to diabetic diets.

Pour water into a small saucepan; add raisins.
Cook until water is dissolved.
Mix applesauce, sweetener, eggs and oil. Stir until well blended.
Add other ingredients; stir well.
Pour into greased and floured tube pan; bake for 1 hour at 350Β°.
