Diabetic Cake is an moderately easy dinner. Made with 2 c. water, 1 c. applesauce (unsweetened), 1 tbsp. liquid artificial sweetener (adjust to taste), 3/4 c. polyunsaturated oil and 1 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook raisins in water until water is evaporated.
Add applesauce, eggs, sweetener and oil; mix well.
Blend in soda and flour.
Add cinnamon, nutmeg and vanilla.
Pour into 8 x 8-inch pan (greased and floured).
Bake at 350Β° for 25 minutes.
