Delicious Zucchini
Delicious Zucchini is an moderately easy dinner. Made with 8 to 10 small zucchini, 3 tbsp. olive oil, 1/4 lb. sliced mushrooms, 2/3 c. coarsely chopped onion and green pepper (optional), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Saute zucchini, mushrooms and onions in oil 10 minutes until tender but not mushy.
Remove from heat.
Toss lightly with 1/3 cup grated cheese.
Add rest of ingredients and toss.
Turn into casserole dish.
Sprinkle with remaining cheese.
Bake 35 to 45 minutes at 350Β°.
