Deer Summer Sausage
Deer Summer Sausage is an moderately easy dinner. Made with 5 lb. ground deer meat, 4 tbsp. tender quick, 4 tsp. liquid smoke, 2 1/2 tsp. coarse pepper and 2 1/2 tsp. mustard seed, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Mix together and form into rolls.
Wrap in foil (shiny side up).
Place in refrigerator for 48 hours.
Fork holes in bottom of foil and place in pan (with drainage rack-broiler pan from oven works good).
Bake for 1 hour and 15 minutes at 350Β°.
Unwrap. Cool.
Re-wrap and freeze.
(We usually double this.)
