Date Nut Fingers
Date Nut Fingers is an moderately easy dinner. Made with 2 eggs, 1/2 c. sugar, 1/2 tsp. vanilla, 1/2 c. sifted all-purpose flour and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Beat eggs until foamy.
Beat in sugar and vanilla.
Sift dry ingredients and stir into other ingredients.
Mix in nuts and chopped dates.
(Best if mixed with hands to blend dates completely into mixture.)
Spread into greased 8-inch square pan. Bake in moderate slow oven (325Β°) for 25 to 35 minutes or until top has a dull crust.
Cut in finger sized pieces while warm. Cool, then remove from pan and roll in powdered sugar.
Makes 21 fingers (1 x 2 1/2-inches).
