Date Nut Bread
Date Nut Bread is an moderately easy dinner. Made with 1 1/2 c. boiling water, 1 c. chopped dates, 1 1/2 c. granulated sugar, 1 egg, beaten and 2 1/4 c. sifted flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Pour boiling water over dates and let stand 10 minutes. Add sugar to beaten egg in bowl.
Add flour, baking powder, salt and baking soda.
Mix alternately with date mixture.
Stir in oil or melted shortening, vanilla and nuts.
Pour into large loaf pan (10 x 5 x 3-inch) and bake 1 hour.
Test with toothpick in middle. Freezes well.
