Date 'n Nut Cake
Date 'N Nut Cake is an moderately easy dinner. Made with 1 lb. chopped dates, 1 c. sugar, 1/2 c. shortening, 2 egg yolks and 1 c. chopped nuts, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cover chopped dates with 1 cup boiling water.
Let stand 1 hour.
Stir 3 times.
In large bowl, mix sugar, shortening, egg yolks, nuts and vanilla.
Add date mixture and stir well.
Add flour, soda, baking powder and salt; mix well.
Add beaten egg whites and fold in lightly.
Pour batter into angel food cake pan, well-greased and floured.
Bake at 350Β° about 1 hour.
Let stand in cake pan for 10 minutes.
Turn out and finish cooling.
