Date Carrot Cake
Date Carrot Cake is an impressive dessert you can prepare in about 1 hour 40 minutes. Made with (20 oz.) can dole pineapple, c. brown sugar, packed, eggs, (8 oz.) dole chopped dates and c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Drain pineapple well.
Beat margarine and sugars until light and fluffy.
Beat in eggs.
Beat in pineapple, carrots, dates and vanilla.
Combine flour, soda, cinnamon, ginger and salt. Gradually beat in flour mixture until well blended.
Pour batter into greased and floured 13 x 9-inch baking pan.
Bake in 350Β° oven 50 to 60 minutes until cake tester inserted in center comes out clean.
Cool completely.
Sprinkle with powdered sugar. Serves 20.
