Cucumber-Tomato Salad
Cucumber-Tomato Salad is an moderately easy dinner. Made with 2 medium cucumbers, 2 medium tomatoes, chopped, 2 green onions with tops, chopped, 1 tbsp. snipped parsley and 1 c. unflavored yogurt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut cucumbers lengthwise into halves.
Scoop out seeds and cut cucumbers into 1/2 inch pieces.
Mix cucumbers, tomatoes, onions and parsley.
Cover and refrigerate at least 4 hours but no longer than 24 hours.
Mix yogurt, salt and cumin.
Cover and refrigerate at least 4 hours and no longer than 24 hours.
Drain vegetables and fold into yogurt mixture.
Garnish with additional chopped cucumbers and tomatoes if desired.
