Cucumber Sandwiches
Cucumber Sandwiches is an easy dinner. Made with cucumbers, 8 oz. sour cram, chopped, fresh herbs and bread rounds, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Peel and slice cucumbers into thin slices.
Put on a plate and sprinkle with salt.
Cover with paper towels and another plate and put weights on top (such as 5 pound bag of flour) for about 1 to 2 hours.
Cut rounds of bread.
Spread with mixture of 8 ounces cream cheese and small amount of sour cream and lots of herbs.
I find mint a must.
Chives are also great.
Onion may be substituted for chives.
Place cucumbers on top of the cream cheese-herb mixture.
