Cucumber Relish
Cucumber Relish is an moderately easy dinner. Made with 5 c. cucumbers, 1 c. onions, 2 green peppers, 2 red peppers and 1/4 c. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Grind cucumbers, onions, green peppers and red peppers.
Add salt.
Cover with boiling water and let stand overnight.
Next morning, drain very well.
Rinse and drain very well again. Prepare the following and bring to a boil: sugar, vinegar, mustard seed, celery seed and turmeric.
Add drained vegetables and boil 15 minutes.
Make a paste of 3 tablespoons cornstarch and 2 tablespoons cold water.
Add to hot relish and cook 3 to 5 minutes longer.
Pour into jars while hot.
