Crusty Scalloped Corn
Crusty Scalloped Corn is an moderately easy dinner. Made with 300 ml soda cracker crumbs, rolled finely, 125 ml margarine, melted, 15 ml onion, finely chopped, 50 ml green pepper, finely chopped and 30 ml margarine, this recipe delivers authentic, satisfying flavors. Preheat oven to 200Β°C.
Combine crumbs and melted margarine. Save 125 ml crumb-margarine mixture for topping.
Press crumbs evenly on sides and bottom of pie pan.
Saute onion and green pepper in margarine.
Blend in flour, salt and sugar.
Slowly add milk; cook and stir until thickened.
Mix in corn and eggs.
Stir well.
Pour corn mixture into crumb crust.
Top with remaining crumbs.
Bake 30 minutes or until a knife inserted (off center) comes out clean.
