Creole Zucchini
Creole Zucchini is an moderately easy dinner. Made with 1 c. chopped onion, 1 clove garlic, minced, 3/4 c. chopped green pepper, 1/4 c. cooking oil and 2 lb. zucchini, sliced (4 medium), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook onion, garlic and green pepper in hot oil in skillet until soft.
Add zucchini, tomatoes, salt and pepper.
Cover; cook over medium heat for 20 minutes or until zucchini is tender. Serve topped with parsley and Parmesan cheese.
