Creole Corn Casserole
Creole Corn Casserole is an moderately easy dinner. Made with 1 1/2 c. raw rice, 1 large onion, chopped, 1 large bell pepper, chopped, 1 stick margarine and 2 cans cream-style corn, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cook rice according to directions; set aside.
Saute onion and bell pepper in margarine until tender.
Remove from heat; add corn, rice, eggs, pimientos, 1 cup of the Cheddar cheese and Creole seasoning to taste.
Pour into 2-quart casserole dish sprayed with Pam.
Bake at 350Β° for 30 to 40 minutes.
Sprinkle balance of cheese on top and melt.
Serves 8 to 10 people.
