Cream of Mushroom Soup
Cream Of Mushroom Soup is an moderately easy dinner. Made with 3 c. sliced mushrooms, 1/2 c. diced carrots, 1/2 c. diced celery, 1/2 c. diced onion and 1 c. beef broth, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Melt 1 tablespoon of butter or margarine and saute mushrooms for approximately 5 minutes.
Set mushrooms aside.
In large saucepan, melt 1 tablespoon of butter and saute carrots, celery and onion for 5 to 10 minutes.
Add remaining butter to saucepan and melt.
Stir in flour.
Cook over medium heat for about 2 to 3 minutes.
Add chicken and beef broth, a little at a time, stirring constantly.
Continue to cook over medium heat.
Add milk into mixture, a little at a time, stirring after each addition.
Add mushrooms to soup and slowly stir in cream.
Add dash of white pepper.
(If soup is thicker than desired, add more milk.)
