Cream of Corn Soup
Cream Of Corn Soup is an moderately easy dinner. Made with 3 c. milk, 2 (2 lb.) cans creamed corn, 1 small onion, minced, 2 tbsp. butter and 1 heaping tbsp. flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine milk and corn in top of double boiler.
Saute minced onion in butter for a few minutes (do not brown); add flour.
Add to corn mixture and cook 15 to 20 minutes.
Mash through a strainer.
Just before serving, add well-beaten egg, cream, chives, parsley, salt and pepper.
Reheat.
Serve hot.
