Cranberry Salad
Cranberry Salad is an moderately easy dinner. Made with 2 c. cranberries, 2 c. sugar, 1 grated orange rind, 3 1/2 c. water and 3/4 c. chopped nuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Grind cranberries.
If frozen, they grind easier.
(Measure after ground.)
Put in heavy saucepan with the following: sugar, orange rind and water.
Bring to boil and pour over Jell-O.
Add unflavored Knox gelatin, softened in 1/4 cup cold water.
When cool, add 1 cup chopped celery.
Stir once again and add 3/4 cup chopped nuts just before it sets.
Best if made 24 hours before serving.
Pour into a nice serving dish.
