Cranberry Pear Crisp
Cranberry Pear Crisp is an moderately easy dinner. Made with 3 c. cooked brown rice, 1 c. fresh or frozen, chopped cranberries, 1/3 c. flour, divided, 1/4 c. rolled oats and 1/4 c. pecans, chopped, this recipe delivers authentic, satisfying flavors. Heat oven to 375Β°.
Combine rice, pears, cranberries, 1/3 cup of the brown sugar and 2 tablespoons of the flour.
Spray a 2-quart baking dish with vegetable cooking spray.
Place rice mixture in bottom; set aside.
Combine remaining flour, remaining sugar and oats in a bowl.
Cut in margarine with pastry blender until mixture resembles coarse meal.
Add pecans and coconut; blend well.
Sprinkle over rice mixture.
Bake 25 minutes or until thoroughly heated.
Serve warm.
Top with frozen vanilla yogurt, if desired.
Makes 8 servings.
