Cranberry-Orange Muffins
Cranberry-Orange Muffins is an moderately easy dinner. Made with 1 3/4 c. flour, 1/3 c. sugar, 2 tsp. baking powder, 1/2 tsp. salt and 1 egg, slightly beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a medium bowl, combine flour, sugar, baking powder and salt.
Make a well in the center.
In a small bowl, combine egg, orange juice and oil.
Add to the flour mixture. Stir until batter is moistened and lumpy.
Fold in cranberries and orange rind.
Put in muffin tins, which have been sprayed with Pam. Fill 3/4 full and sprinkle tops with a little sugar.
Bake at 400Β° for 20 minutes or until golden brown.
