Cranberry Ice
Cranberry Ice is an easy dinner. Made with 12 oz. fresh cranberries, 2 c. sugar, 4 c. cold water, 3 lemons and 1 tsp. grated orange peel, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash cranberries thoroughly.
Cut lemons in half; squeeze the juice from them into a bowl.
Grate peel from an orange into bowl. Set aside.
In a saucepan, boil together the cranberries, sugar and 2 cups of the cold water until the berries pop.
Blend in blender until smooth.
Add the lemon juice/orange peel and the remaining 2 cups of water.
Blend again until thoroughly mixed. Pour mixture into a large container and freeze.
Remove from freezer about 1 hour before serving.
A great drink from Cranberry Country.
Yield
10 cups.
