Cranberry Checkerboard Salad
Cranberry Checkerboard Salad is an moderately easy dinner. Made with 1 (1 lb.) can whole cranberry sauce, 2 (3 oz.) pkg. nutra-sweet lemon gelatin, 1 tbsp. lemon juice, 1/4 tsp. salt and 1/2 c. reduced calorie mayonnaise, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat cranberry sauce in saucepan.
Strain, reserving cranberries.
Mix liquid with 3 cups water in bowl.
Add gelatin, stir until completely dissolved.
Add lemon juice and salt, mix well.
Chill until thick.
Reserve 1 1/2 cups thickened gelatin mixture.
Pour remaining mixture into chilled 13 x 9 1/2 x 2-inch dish.
Chill until firm.
