Cracklin Bread
Cracklin Bread is an moderately easy dinner. Made with 1 c. buttermilk, 2 eggs, well beaten, 1/4 c. bacon drippings, 2 c. cornmeal and 1 c. sifted flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 425Β°. Stir buttermilk into beaten eggs.
Add 1/4 cup bacon drippings. Combine all dry ingredients.
Add to liquid ingredients all at once, then sprinkle the crumbled bacon into the batter. Beat well and pour into a large pan (9 x 12-inch) or heavy iron skillet (12-inch); bake until golden brown in the hot oven. Cut into wedges or squares and serve hot.
