Crab Cakes
Crab Cakes is an moderately easy dinner. Made with 1 lb. fresh or canned crab meat, 1 1/2 c. milk, 4 tbsp. butter, 1 medium green pepper, chopped and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute green pepper and onion in butter.
Add mustard, Worcestershire sauce, salt and pepper.
Blend in flour, using wooden spoon or wire whisk.
Add crab meat.
Chill thoroughly. Form into cakes, 1-inch thick.
Dip cakes in cracker meal, then in beaten eggs, then in bread crumbs.
Fry in deep fat until nicely browned.
Drain on absorbent paper.
