Crab Cakes
Crab Cakes is an moderately easy dinner. Made with 1 lb. crabmeat, cooked and flaked (do not use imitation!), 2 slightly beaten eggs, 1 tsp. salt, 1/2 tsp. pepper and 1/2 tsp. dry mustard, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine all ingredients, mixing with a fork.
Form into 7 or 8 thick patties.
Coat both sides with finely crushed saltine cracker crumbs on waxed paper and fry in skillet with minimum hot Crisco until lightly browned on each side.
