Crab Cakes
Crab Cakes is an moderately easy dinner. Made with 1 lb. lump crab meat, 1/3 c. cracker crumbs (unsalted), 1 large egg, 1/4 c. chopped parsley and 1/2 tbsp. dijon mustard, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine cracker crumbs, egg, parsley, mustard, mayonnaise and pepper and stir to blend.
Add crab meat and toss lightly with fork.
Shape cakes with a light touch and chill for about 1 hour. Cook 3 minutes each side in 2 tablespoons of oil and 2 tablespoons of unsalted butter (can use all butter).
Yields 8 to 9 cakes.
