Country Soup is an moderately easy dinner. Made with 4 potatoes, pared and diced, 2 carrots, pared and thin sliced, 2 medium onions, sliced, several lettuce leaves and several celery leaves, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

👨‍🍳 Instructions

In saucepan, place potatoes, carrots, onions, lettuce, celery, basil, bay leaf, salt and pepper.

Cover with cold water.

Bring to a boil; reduce heat and simmer, covered, for 1 hour.

Pass mixture through food mill, strainer or purée in blender.

Measure purée; add 1 cup light cream for every 3 cups purée.

Heat thoroughly.

To serve, top with small lump of butter.

Serves 6 to 8.
