Country Lima Beans
Country Lima Beans is an moderately easy dinner. Made with 5 strips bacon, 1 c. chopped onions, 2 tbsp. flour, 2 cans baby lima beans and 1 large can tomatoes (2 1/2 c.), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cut bacon into small pieces.
Fry until crisp.
Pour off all but 2 tablespoons fat.
Add onions and cook until soft.
Sprinkle with flour.
Stir to make roux.
Cut tomatoes into small pieces. Add to roux.
Add lima beans.
Heat and serve.
The gravy can be made ahead of time.
Serves 8 generously.
