Country Garden Pea Salad
Country Garden Pea Salad is an moderately easy dinner. Made with 2 c. frozen green peas, 1/2 c. chopped dill pickle (homemade with lemon), 1/4 tsp. ground celery seed, 2 tbsp. minced onion and 1 c. diced millet cheese (see millet cheese recipe), this recipe delivers authentic, satisfying flavors. Cook peas 5 minutes, then drain and cool.
Add remaining ingredients (except tofu) and toss gently.
Blend tofu with some distilled water and pour over salad.
Serve chilled.
