Corn-Jalapeno Casserole
Corn-Jalapeno Casserole is an moderately easy dinner. Made with 1 c. uncooked regular rice, 1 medium onion, chopped, 1 medium size green pepper, chopped, 1 c. celery, chopped and 1 stick butter or oleo, melted, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook rice according to package directions; set aside.
Saute onion, green pepper and celery in oleo until vegetables are tender.
Combine rice, sauteed vegetables and next 3 ingredients, stirring well.
Spoon mixture into a slightly greased 12 x 8 x 2-inch baking dish.
Bake at 350° for 40 to 45 minutes.
Garnish with green pepper rings, cherry tomatoes and parsley, if desired. Yield
12 servings.
