Corn Fritters
Corn Fritters is an moderately easy dinner. Made with 2 eggs, 1/2 c. milk, 1 tsp. oil, 1 c. cooled corn, drained and 1 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat the eggs well, then stir in the milk.
Set aside.
Sift together the flour, baking powder and salt.
Mix with the eggs and milk until smooth.
Beat in the oil and add the corn.
Drop by the spoonfuls into hot deep oil and fry until brown.
Serve either syrup or hot gravy.
Yields 12 to 14 small fritters.
