Corn Fairfax
Corn Fairfax is an impressive dinner. Made with 1/4 c. chopped onion, 4 tbsp. bacon fat, 2 tbsp. flour, 2 eggs, beaten and butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute onion and celery in bacon fat for 5 minutes.
Add corn and beans; cook slowly for 5 minutes.
Add flour, salt and pepper. Blend and stir in milk and eggs.
Pour into shallow baking dish. Top with remaining ingredients.
Bake at 350Β° for 20 minutes. Serves 4.
