Corn Chip Soup
Corn Chip Soup is an impressive dinner. Made with 1 lb. + ground beef, browned and drained, 1/2 c. onion, chopped and browned, 1 (30 oz.) can diced tomatoes, 1 (16 oz.) can tomato sauce and 1 (25 oz.) taco seasoning mix, this recipe delivers authentic, satisfying flavors. In a large pan, cook ground beef until browned; season with garlic salt.
Add onion and cook until limp or browned.
Add water, undrained beans, tomatoes, tomato sauce and taco seasoning mix.
Simmer, covered, about 15 minutes.
Just before serving, add diced avocado.
Pass grated cheese, sour cream and corn chips for topping on each serving.
Serves 10.
