Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 1/4 c. green pepper, chopped, 2 tbsp. chopped onion, 1 lb. lean ground beef, 2 tbsp. vegetable shortening, melted and 1 (12 oz.) can yellow whole kernel corn, do not drain, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Brown green pepper, onion and ground beef in melted shortening in heavy frypan.
Stir in corn, tomatoes and seasonings.
Cover and simmer over low heat for 20 minutes, stirring occasionally. Uncover, stir in macaroni; simmer an additional 10 minutes or until macaroni is tender, stirring occasionally.
Yields 4 to 6 servings.
