Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 1 medium size onion, chopped, 1/2 bell pepper, chopped, 1 pkg. mahatma yellow rice, 2 cans mexican corn and 2 cans cream of mushroom soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion and bell pepper in butter in large cooking dish. Add 1 cup water; bring to boil.
Add rice.
Cover and let stand 5 minutes.
Add corn and cream of mushroom soup.
Sprinkle top with grated cheese.
Bake in 350Β° oven 30 minutes.
Salt and pepper to taste.
