Corn Bread Topped Ham Loaf
Corn Bread Topped Ham Loaf is an moderately easy dinner. Made with 2 beaten eggs, 2/3 c. milk, 1 c. soft bread crumbs, 1/4 c. chopped onion and 2 lb. ground fully cooked ham, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In bowl, combine beaten eggs and milk.
Stir in soft bread crumbs and onion.
Add ground ham.
Mix well.
Pat meat mixture into 12 x 7 1/2 x 2-inch baking dish.
Bake in 350° oven for 30 minutes.
Remove meat loaf from oven; drain off any fat.
Spread apricot preserves over top of ham loaf.
Increase oven temperature to 400°.
Prepare corn muffin mix according to package directions. Pour over preserves covered ham loaf.
Bake in 400° oven about 20 minutes more or until the corn bread layer is done.
