Copper Pennies
Copper Pennies is an impressive dinner you can prepare in about 1 hour 42 minutes. Made with . carrots, peeled and cut into discs, medium green pepper, medium onion, tomato soup and c. vegetable oil, this recipe delivers authentic, satisfying flavors. Cook carrots in boiling water until tender, but not mushy. Drain.
Cut onion into rings.
Cut pepper into rings, discarding seeds.
Combine onion and pepper with cooked carrots in heatproof bowl.
Combine all remaining ingredients in saucepan.
Slowly bring to simmer over medium heat.
Remove from heat and pour over carrots, onion and pepper.
Cover and refrigerate overnight. Serve cold.
Will keep in refrigerator 2 to 3 weeks.
Makes 8 servings.
