Cookie Coffee Cake
Cookie Coffee Cake is an moderately easy dinner. Made with 1 package of yeast, 1/4 cup warm water (not hot), 4 cups flour, 1 tsp salt and 1 tsp grated orange rind, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a small bowl, dissolve yeast in water.
In a large bowl combine flour, salt, orange rind, and 1/4 cup sugar.
Cut in butter with fork.
Combine eggs, milk, dissolved yeast and add to flour mixture.
Combine lightly, cover tightly.
Refrigerate overnight.
Divide dough in half on a floured surface.
Roll each piece into an 18 x 12 rectangle.
Sprinkle with remaining sugar mixed with cinnamon.
Roll up tightly beginning at the wide end.
Cut each roll into 1 inch slices.
Place cut side up on a greased baking sheet.
Flatten with palm of hand.
Bake at 400Β° about 12 minutes.
Glaze-orange juice and powdered sugar.
Pour over warm rolls.
