Combine sugar, mustard, vinegar and heat to boiling.
Pour over well beaten egg yolks, stirring constantly. Cook until thickened, beating rotary egg beater. Add butter.
Before serving,
1/2 cup heavy cream, whipped, or thin cream or milk.
Do not dilute vinegar.
Makes 1 1/2 cups.
