Company Chicken Cordon Bleu
Company Chicken Cordon Bleu is an moderately easy dinner. Made with 8 chicken breasts, skinned and boned, 1/4 tsp. salt, 1/4 tsp. white pepper, 2 eggs, beaten and 1 c. milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Place each chicken breast between two sheets of wax paper; flatten to 1/4-inch thickness.
Use meat mallet or rolling pin. Combine eggs and milk.
Brush side of chicken with milk.
Put a piece of ham and piece of cheese in center of chicken breast. Brush cheese with milk mixture.
Turn ends over cheese and ham. Roll up, beginning with long side.
Secure with toothpicks. Dredge chicken in flour.
Dip in remaining milk mixture.
Coat well with bread crumbs. and chill 1 hour.
