Coconut Rice
Coconut Rice is an moderately easy dinner. Made with 2 tsp oil, 3/4 c shredded coconut, 1/2 c finely chopped onion, 2 c rice and 4 c chicken broth, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat oil in a large saucepan.
Add coconut and cook and stir until browned.
Add onion and cook 1 minute.
Add broth and bring to a boil.
Cover, reduce heat to low and simmer for 25 to 30 minutes until liquid is absorbed and rice is tender.
Remove from heat.
Sprinkle with chives.
