Coconut Pound Cake
Coconut Pound Cake is an moderately easy dinner. Made with 3 c. plain flour, 2 1/2 c. sugar, 1 c. coconut (i use 6 oz. frozen coconut), 1 tbsp. baking powder and 1 tsp. coconut flavoring, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Sift flour, baking powder and salt together.
Cream shortening and sugar 10 minutes.
Add eggs, one at a time, beating after each addition.
Add flour mixture alternating with milk, beating after each addition.
Add coconut and flavoring.
Mix at low speed of mixer.
Put in a large greased and floured tube pan.
Put in cold oven.
Bake 1 hour and 25 minutes at 350Β° or until done.
