Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 1/2 c. sugar, 4 tbsp. flour (plain), 1/2 tsp. salt, 1 1/2 c. milk, scalded and 2 egg yolks, beaten, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix dry ingredients.
Add milk slowly while stirring.
Cook in double boiler until well thickened.
Pour over egg yolks, stirring rapidly.
Add margarine and pour back into top of double boiler. Cook a little longer.
Remove from heat, cool and add vanilla and coconut.
Pour into baked pastry shell.
Cover with meringue and sprinkle well with remaining coconut.
Place in 350Β° oven and brown.
