Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 3 egg yolks, 1 tbsp. cornstarch, 1 tbsp. oleo, 1/2 c. sugar and 1 pt. sweet milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat eggs with mixer until foamy.
Add sugar, flour and cornstarch.
Slowly add milk.
Cook until thick.
Remove from heat; add salt, vanilla, oleo and coconut.
Return to heat; cook until coconut, salt and vanilla are hot and mixed well with pie filling.
Pour in 9 or 9 5/8-inch baked pie crust.
Top with meringue.
Bake until golden brown.
