Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 1 box coconut pie or pudding mix, 2/3 c. sugar, 2 c. diluted evaporated milk, 3 eggs (save whites for meringue) and 1 c. coconut, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat pudding mix, sugar, milk and egg yolks in saucepan until it is thick.
Remove from heat and beat until smooth. Add coconut, vanilla and margarine.
Put in baked pie shell. Add meringue and sprinkle with coconut on top.
