Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 4 c. milk, 4 large egg yolks, pinch of salt and 8 tbsp. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix sugar, flour and salt in heavy saucepan until smooth.
Add milk.
Mix well.
Beat egg yolks; strain and add to mixture.
Add butter; cook until thick (stirring constantly with wooden spoon). Remove from heat; add vanilla and 1/2 of coconut.
Mix. Pour into baked pie shells.
Sprinkle with rest of coconut on top of meringue and slowly brown.
