Coconut Macaroons
Coconut Macaroons is an moderately easy dinner. Made with 2 1/2 c. flour, 1/3 tsp. soda, 2 tsp. baking powder, 1/2 tsp. salt and 1 1/4 c. shortening, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 350Β°.
Mix flour, baking powder, soda and salt together.
Work shortening until soft.
Add sugar; work until mixture is smooth and creamy.
Beat eggs; add to shortening mixture.
Mix in flour mixture oats, nuts and coconut thoroughly. (May need to work with hands.)
Roll into size of a walnut, place onto ungreased cookie sheet.
Grease hands with butter or shortening.
Makes 7 dozen.
