Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 2 baked pie crusts (9-inch), 1 can flaked coconut, 1 qt. milk, 1 1/4 c. sugar and 2 pinches salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine all the dry ingredients, cornstarch, sugar and salt. Put milk to simmer in 2-quart pot.
Take egg yolks and add some warm milk to them and mix to dry ingredients.
Add to pot and cook until thickened.
Add coconut; stir constantly.
Add to pie crust. Beat egg whites for meringue; put on top of pies and bake until golden brown.
