Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 1/2 c. sugar, 1/4 tsp. salt, 3 egg yolks, slightly beaten, 1 tbsp. margarine, softened and 3 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix sugar, cornstarch and salt into a 1 1/2-quart saucepan. Stir in milk gradually.
Cook over medium heat until mixture thickens and boils.
Boil and stir 1 minute.
Stir at least half of the flaked coconut gradually into egg yolks.
Blend into hot mixture in saucepan.
Boil and stir 1 minute.
Remove from heat; stir in butter and vanilla.
Pour into pie shell.
Sprinkle top with 1/4 cup flaked coconut.
