Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 1/4 stick butter, 3/4 c. sugar, 1/2 c. milk, 1 whole egg and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In double boiler heat 1/4 stick butter and 3/4 cup sugar. Turn heat on high so that the water in the bottom boiler comes to a boil.
In blender, blend 1/2 cup milk, egg and salt.
Mix well. Add cornstarch.
Microwave 2 cups milk to boiling stage.
Add blender mixture and hot milk to mixture in pan.
Stir constantly until thick.
Add shredded coconut and extract.
Stir and pour into baked 10-inch pie shell.
