Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 1 can evaporated milk (14 oz), 1 c water or regular milk, 1/2 c sugar, 1/8 tsp salt and 5 tbsp flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Pour milk (& water or regular milk) into saucepan, heat to almost boiling.
Mix sugar, flour, egg yolks vanilla salt -add to hot milk, stirring till mixture thickens.
Add coconut. Pour into 2 baked pie shells.
For meringue, beat egg whites until peaks form.
Add 3 Tbsp sugar and 1 tsp vanilla.
Beat 2 minutes. Spread on custard in pie shell.
Sprinkle with more coconut.
Brown in 350 degree oven.
